From the La Choza: Stories, Recipes and Baking Culture

Welcome to our little corner

Here we share what we love most: talking about bread, coffee, Colombia and the community we’ve found in Soria. Recipes, interesting facts, news and everything that’s going on inside and outside the La Choza.

The secret behind our bread: our sourdough

At La Choza del Pan, we don’t use commercial yeast. Our sourdough starter is a living culture that we feed every day with flour and patience. The result is bread with a moist crumb, a crisp crust and that slightly tangy flavour that, once you’ve tasted it, you’ll never forget. Discover the process behind every loaf that leaves our bakery.

What is an arepa, and why should you try one right now?

An arepa is much more than just a corn pancake. It’s the breakfast of choice for millions of Colombian families, the perfect side dish, and the ideal mid-afternoon snack. At La Choza, we make them just like they do at home: with ground corn, cooked on the griddle and filled with whatever takes your fancy. If you haven’t tried them yet, you’ve got a great excuse to come along

Why we serve speciality coffee (and not just any old coffee)

Colombia is one of the world’s leading coffee producers, and at La Choza we know this all too well. That’s why we work with Supracafé, a traceable speciality coffee that reaches your cup with all its nuances intact. Good coffee needs skilled hands: let us tell you how we prepare it and why it makes all the difference.

Colombian pipián empanadas

Empanadas are one of our most popular items. Fried corn pastry, a generous filling and that touch of pipián that makes them unique. Today we’re sharing the basic steps so you can make them at home, although you know ours will always taste better. Come and see for yourself whenever you like.

From Bogotá to Soria: how La Choza del Pan came to be

La Choza del Pan opened its doors in 2022 with a simple yet powerful idea: to bring flavours to Soria that you won’t find anywhere else. Rich chocolate, sourdough bread, freshly fried empanadas, and lulo and soursop milkshakes. A small hut with a big heart, on Calle Pintor Maximino Peña. This is our story.
